Love a simple salad with a bit of sweet crunch…this fall pear candied walnut salad with balsamic drizzle hits all the notes! I always mix a dressing at the beginning of the week as part of my prep. This one is so easy and matches with many different salad greens.
And I’m curious- who loves nuts in salad and who does not? Leave me a if you do. My husband always picks them out, lol.
Ingredients:
CANDIED WALNUTS
1 cup walnuts
1 tablespoon coconut oil
1 tablespoon coconut sugar
2 tablespoons maple syrup
Pinch of salt
Pinch of cinnamon
DRESSING
¼ cup balsamic vinegar
¼ cup olive oil
1 medium shallot – minced
Pinch of salt and black pepper
SALAD
16-ounce bag mixed greens – organic
1 ripe pear – thinly sliced, stem and seeds removed
¼ cup dried cranberries
½ cup crumbled feta cheese
Directions:
01. In a medium sized skillet heat the coconut oil and sugar over medium-high heat until bubbling. Add the walnuts, maple syrup, salt and cinnamon.
02. Stirring to coat the walnuts for 3-4 minutes until fragrant and most of the liquid has evaporated. Remove from the heat and set aside.
03. Add the ingredients for the dressing into a jar. Shake vigorously with the lid on to combine.
04. Add the mixed green into a large bowl. Pour over the dressing and mix to coat the salad leaves. Top with sliced pear, dried cranberries, feta cheese and candid walnuts.
