I spend a lot of time here (in the kitchen)and I’m not complaining (ok maybe sometimes, especially this past year, ha), BUT I’m glad I turned my attitude into one of joy in the kitchen, best decision I consciously made all those years ago.🙏 I spend a lot of time in this spot, creating, mixing, tossing and preparing food to nourish the ones I love.
We had a beautiful dinner out last night with friends (so grateful to do this again), so tonight I’m cooking, and blending up this insane cilantro lime dressing that tastes SO good tossed with this superfood slaw. You won’t even believe it. It’s full on food power in every bite. Delicious! If you want to hold tight on the spice- just do less of the jalapeno. But dang, this is now our go-to slaw of the season! 😎
Ingredients
Slaw
2 cups Brussels Sprouts, finely sliced (on a mandolin is best)
2 cups Lacinato kale, finely sliced
1 cup red cabbage, finely sliced
1 green apple, finely sliced
2 tbsp green onion, sliced
1 medium avocado, diced
1/2 cup toasted pumpkin seeds
1/4 cup hemp seeds
Cilantro Lime Sauce
1 cup plain Greek yogurrt
1/2 cup tightly-packed fresh cilantro
1/4 cup freshly squeezed lime juice
1 tbsp honey
1/2 tsp fine sea salt
1/4 tsp freshly cracked black pepper
3 green onions (just the green parts)
1/2 jalapeno pepper, stemmed and cored (optional)
Directions
01. SLAW. In a large mixing bowl combine all the slaw ingredients except the avocado, pumpkin seeds, and hemp seeds. Set aside.
02. DRESSING: Combine the Greek yogurt, cilantro, lime juice, honey, salt, black pepper, green onions, and jalapeno in a blender or food processor. Pulse briefly a few times until the mixture is combined.
03. Drizzle the sauce on top of the slaw, then toss until the mixture is evenly combined. Season with extra salt, pepper or lime juice if needed. Top it off with diced avocado, sprinkle with the toasted pumpkin seeds and hemp seeds. Serve right away and enjoy!
