The Easter season holds significant importance for our family; it’s a time for rebirth, growth and renewal, and it also happens to be the start of all things fresh. It’s so inspiring to see the buds forming on the trees, little shoots sprouting from the earth and the local goodness pouring into neighbourhood markets and stores.

The Easter weekend includes church, and time with family and friends. In past years, we have hosted beautiful brunches with egg hunts, followed with waffle bars, fruit platters, mini toasts, dips and desserts. I could brunch all day! If it’s our turn to host dinner, our tradition is lamb, however, I love to prepare another option for those that don’t like lamb, and last year I made salmon which was a big hit. My dijon salmon with a dill chive sauce would be the perfect addition to your Easter dinner. Serve that with the gorgeous citrus, fennel salad, and you have the most beautiful, healthy and complete spring dinner on point.

No matter your traditions, I hope you feel the hope that comes with this blessed season, and of course the nourishment that delicious food can bring to your mind, body and spirit.
