Avocado-mango creamsicles

Ingredients :
First layer

  • 1 cup full fat coconut milk
  • 1 mango – skin removed, chopped in small pieces
  • 1 tablespoon maple syrup

Second layer

  • 1 medium avocado
  • ½ full fat cup coconut milk
  • ½ teaspoon vanilla extract
  • ¼ cup maple syrup
  • Pinch of salt

Directions:

  1. Combine the ingredients for the first layer and fill the popsicle mold with this mixture half way through. Combine the ingredients for the first layer and fill the popsicle mold with this mixture half way through.
  2. Freeze for 15 minutes
  3. In a blender combine the ingredients for the second layer. Next fill up the remaining half of the popsicle mold. Cover with the lid and insert the sticks.
  4. Allow to freeze for 6 hours or over night.
