I LOVE bananas; they’re consumed on the daily around my house. This naturally “sweet” fruit is the perfect addition to smoothies, snacks, loaves, muffins and in this beautiful situation – baked oatmeal!
I buy 2 bunches at a time so that one can ripen to be used in all my baked goods.
And although banana loaf is about one of my favourite things, you will love this banana almond butter baked oatmeal just as much – it makes a delicious and healthy breakfast or snack and will keep your energy going strong throughout the day!
01. Preheat oven to 375. Spray a 9×9 inch pan with cooking oil and set aside.
02. In a large bowl, mash the ripe banana until smooth. Add in the eggs, almond butter, vanilla extract, maple syrup, and almond milk; mix until smooth.
03. Add in the rolled oats, flour, baking powder and salt. Mix everything until it’s thoroughly combined.
04. Transfer batter into a baking dish and top with sliced bananas.
05. Bake for about 30 to 40 minutes, until a toothpick inserted into the middle comes clean.
