Who doesn’t love a stack of pancakes?! Honestly, my kids would be happy if I made pancakes every. single. morning. Perhaps that’s why I’m always tweaking, creating and coming up with new ideas to make pancakes even better. My nutritionist mind is always thinking of adding more protein, fibre and healthy fats to all my recipes. So with these banana chia pancakes, the oat and almond flour are a very healthy combo and the chia seeds add all of the above- chia truly is magic.
You will absolutely love these pancakes and I know you will be buying more bananas to let them ripen so you can make more of these yummy pancakes!
Ingredients –
1 organic free range egg
1 medium overripe banana, peeled
1/2 to 3/4 cup unsweetened almond milk
1 tsp vanilla extract
1/2 cup gluten-free all purpose flour or oat flour
1/2 cup almond flour
1 tbsp ground chia seeds
2 tsp baking powder
1/2 tsp cinnamon
pinch of salt
1 tsp coconut oil (for the pan)
Optional Toppings
sliced banana
chopped walnuts
maple syrup
Directions –
01. In a medium bowl, beat the egg. Add the banana and mash until creamy, add the almond milk (1/2 a cup at a time) and vanilla; mix well. Add the flours, ground chia seeds, baking powder, cinnamon and salt. Mix until combined. Batter should be on the thicker side.
02. Preheat your nonstick pan and heat the coconut oil.
03. Using a 1/4 measuring cup, scoop and pour the batter onto the hot pan. Cook until nicely golden brown on each side, about 3 minutes on each side.
04. Serve hot with maple syrup, banana slices, and walnuts. Enjoy!
