Cook the quinoa as instructed on the package. Approximately for every cup of quinoa you need two cups of water. In this case sub one cup of water with one cup of full fat coconut milk.
Halfway through the cooking add ½ teaspoon cinnamon powder and salt.
While the quinoa is cooking warm up the second cup of regular coconut milk for the topping.
Once the quinoa is ready serve hot in individual bowl. Top off with coconut milk, pumpkin seeds, Brazil nuts, granola, and shredded dark chocolate. Enjoy!
