Fall Spiced Chocolate Granola

Granola is a delicious and nourishing way to add in extra protein, healthy fats and fiber into your day!

Itā€™s easy to make, and trust me the house smells SO good when granola is baking in the oven. As most foods, I prefer to make it myself as that way I am in charge of how much extra sweet and salt gets added. I have a couple great recipes in my cookbook, but I thought it would share a new one here for you as it brings in ALL the fall feels (yes just because Thanksgiving is over Iā€™m not ready to move on, lol). šŸ‚šŸ¤Ž

Now the other question- are you a ā€œmylkā€ or yogurt person with your granola?

Ingredients:

  • 3 cups rolled oatsĀ 
  • 1 cup chopped pecansĀ 
  • 2 Ā½ teaspoons pumpkin spiceĀ 
  • Ā½ teaspoon sea saltĀ 
  • Ā½ cup pumpkin puree ā€“ unsweetenedĀ 
  • Ā½ cup maple syrupĀ 
  • Ā¼ cup melted coconut oilĀ 
  • 2 teaspoons vanilla extractĀ 
  • Ā½ cup dark chocolate chipsĀ 

 

Directions:

  1. 01. Preheat the oven to 350Ā° F. Line a baking sheet with parchment paper and set aside.
  2. 02. In a large bowl combine rolled oat, pecans, pumpkin spice and salt.
  3. 03. InĀ a separate bowl stir together the remaining ingredients, except chocolate chips. Pour this mixture into the dry ingredients bowl and mix until combined.
  4. 04. Pour mixture into the prepared baking sheet, bake until golden brown for 25-30 minutes, stirring every 10 minutes.
  5. 05. Let cool for at least 1 hour before serving. The granola will crisp up as it cools.
  6. 06. Stir in the chocolate chips and store in an airtight container for up to one week at room temperature.
