Frozen Lemon Dessert with Almond Crust

Say hello to the most lemony fresh, cool treat ever! This tastes like a frozen lemon meringue pie- serious!!!! I love the fact it’s no-bake, and frozen so will be the perfect finish to those hot summer dinners (that I hope are on their way, lol). I could have eaten the lemon filling by the spoon- lol!

Ingredients

Almond Crust

  • 4 almond biscotti cookies
  • 1/2 cup toasted sliced almonds
  • zest from one medium lemon
  • 2 tbsp extra virgin olive oil

Lemon Dessert

Use an instant-read thermometer for this part

  • 5 large eggs
  • 1 cup organic sugar
  • 1 cup organic ricotta cheeese
  • 1/2 cup organic grass-fed butter, melted
  • 1 cup lemon juice, freshly squeezed
  • 1 tbsp grated lemon zest
  • 1 1/2 cup organic heavy whipping cream

 

Directions

  1. 01. Line a 9×5 inch loaf pan with plastic wrap, making sure it overlaps on all sides (the overlap is used to cover the top in the later process).
  2. 02. ALMOND CRUST: place biscotti, almonds and lemon zest in a food process; pulse until you have coarse crumbs. Drizzle in olive oil and mix until you have damp crumbs.
  3. 03. Place this mixture in the bottom of plastic lined loaf pan and press down to make an even layer. Set aside!
  4. 04. LEMON DESSERT: In a large bowl, beat the eggs, sugar, and ricotta cheese. Slowly add in the melted butter, then stir in the lemon juice and zest.
  5. 05. Transfer the egg mixture to a large sauce pan. Whisk constantly and vigorously over medium heat for about 5 minutes, until mixture reaches at least 160F using a thermometer. Transfer to a large bowl to cool completely.
  6. 06. In a medium bowl, whip the cream until soft peaks form. Fold into cooled lemon mixture. Pour into prepared pan with almond crust. Carefully cover with plastic, and place in the freezer for 8 hours or overnight.
  7. 07. Remove from the freezer 10 minutes before serving. Using plastic wrap, lift dessert out of the pan. Invert onto a serving platter then discard the plastic wrap. Cut into slices and enjoy!
