Salads are my jam (and muffins, and smoothies and energy bites, haha.) BUT seriously I feel like every summer dinner is just better when there is a salad that can double up as your starch and veg. Like yumm!!!
Fresh flavours, healthy, simple yet super delicious, give this Mediterranean pasta salad a try. It’s the perfect side or is hearty enough to be the main star of the show!

Mediterranean Pasta Salad
Ingredients –
1 lb rotini pasta
1 cup mixed olives, pitted
2 cups fresh arugula
1/2 cup fresh parsley leaves, chopped
1/4 cup red onion, minced
1/4 crumbled feta cheese
1 1/2 cup cherry tomatoes, halved
3 Persian cucumbers, diced
1 cup hard salami, diced (optional)
Dressing
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1/2 tsp sea salt
1/2 cup extra virgin olive oil
2 tbsp red wine vinegar
Directions –
Cook the rotini pasta according to package directions. Drain, rinse and let cool.
in the bottom of a large salad bowl or platter whisk together the dressing ingredients.
in the same bowl toss the cooked and cooled pasta, olives, arugula, parsley, onion, cherry tomatoes, feta, cucumber, and salami (if you are using) with the dressing. Serve right away or allow to chill in the fridge.
