Spiced Pear-Quinoa-Chia Porridge

Ingredients:

  • ½ cup water
  • 1 14-ounce can full fat coconut milk – set ½ cup aside
  • ½ cup quinoa – rinsed
  • 1 chopped pear
  • 1 tablespoon chia seeds
  • 2 inches fresh ginger – grated
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
Optional Toppings
• Full fat coconut milk
• Thinly sliced pear
• Chopped walnuts
• Honey

Directions:

  1. 01. In a medium saucepan, combine water and 1 1/2 cups of the coconut milk and bring to a boil.
  2. 02. Add quinoa and reduce to a medium heat. Cook for 10 to 15 minutes until most of the liquid is absorbed. Add remaining 1/2 cup of coconut milk, chia seeds, ginger, cinnamon, nutmeg, vanilla, & pear. Stir to combine.
  3. 03. Remove from heat and let stand for 5 minutes, or until chia seeds have rehydrated and porridge is creamy.
  4. 04. Add your favourite toppings with a drizzle of honey. Enjoy!
